As it gets colder outside (and by extension, in our apartment) I find myself cooking to warm up. I have about 30 jars of tomatoes in the freezer from this year’s garden and I consider it a bonus if I can use a few of them to make space.
Last night, vegan minestrone and yam fries. Delicious. The problem is, while I emptied three jars of tomatoes, I filled two back up with soup. Not much for creating space.
Today, I am grateful for the elements in my kitchen that make cooking fun (and easy): gas stove, sharp knives, jars of frozen tomatoes, half a cabinet dedicated to spices, and an excellent cutting board.
